Italian Parsley & Olive Oil Mussels

This is an absolute favourite of mine, and in my opinion the best recipe you can use. 


  • 2kgs of Mussel Monger Mussels 
  • 1 large white onion 
  • 2 long stem of celery 
  • 1 clove of garlic 
  • 150 ml of good quality, South African olive oil (Not blended)  
  • 50 grams of fresh Italian Parsley 
  • 50 ml of white wine 
  • The juice of half a lemon 
  • Course black pepper 
  • No Salt needed 


  1. Clean mussels as per instructions on box 
  2. Very finely dice the celery, onion and garlic. (The finer something is diced, the more impact the flavour)
  3. Place the olive oil in the largest pot you have and on a low heat sweat off the onion and celery for roughly 5min. 
  4. Add the garlic and immediately add the mussels and white wine. Give it a good stir, close with the lid and steam for 6-8min, stirring once more during the process. 
  5. Finely chop up the Italian parsley and once mussels are ready give them a stir and add the parsley. 
  6. Serve immediately.
